Crab or Smoked Salmon Quiche
Ingredients

cup dungeness crab meat or smoked salmon

1/2 |
cup mayonnaise
|
1/2 |
cup milk
|
2 |
eggs
|
1 |
tbs. cornstarch
|
1 and 1/2 |
cups Swiss cheese, grated (you may also use Monterey Jack)

1/3 |
cup onions or shallots, finely chopped
|
1/3 |
cup celery
|
dash |
white pepper |
dash |
paprika on top

9 inch pastry shell
|
Blend mayonnaise, milk, eggs and cornstarch.
Stir in crab, cheese, onions and white pepper.
Pour mixture into 9" pastry shell.
Bake at 350 for 35- 40 minutes.
