Stir Fried Lady Finger Curry

Ingredients

kg lady fingers cut in small pieces |
1/2 |
kg chopped onions |
4 |
tbs. cooking oil |

salt to taste |

red chili powder |
|
coriander powder |
2 |
small tomatoes |
|
chopped coriander and green chilies for garnishing |
Please Note: Lady fingers are small green, slim vegetables
Fry the chopped onions in the cooking oil till they are light brown.
Then add the diced lady fingers to the fried onions.
Splash a little water so that they become tender, mixing the vegetables lightly with the onions.
When they turn dark green add spices, tomatoes and chilies.
Let them cook for another 20 minutes on low flame.
Garnish it with chopped coriander and serve it hot with traditional Indian bread 'naan'.
