Hudson's Cold Pasta Salad

2 cups large pasta shells
250 g frozen beans or peas
2 medium zucchini (finely sliced)
1 large red pepper (finely sliced)
1 large green pepper (finely sliced)
250 g fresh mushrooms (finely sliced)
125 g black olives (sliced)
250 g small cooked prawns
1 quantity Italian herb dressing

Cook large shell pasta as per instructions on packet.

Drain, rinse and place in bowl.

Cook beans or peas until just tender. Cool and place in bowel with pasta, and remaining ingredients.

Toss Italian herb dressing (recipe below) lightly through the salad.

Garnish with olives and serve with barbecued meats chicken or seafood.

Italian Herb Dressing


X cup extra virgin olive oil
X cup white wine vinegar
2-3 tbsp tomato paste
1 tsp grated garlic
1 tsp sugar
1 tsp dry mustard
X tsp salt
X tsp oregano
X tsp dried basil
2 stalks spring onion or parsley (chopped)
freshly ground pepper

X = the measurements were corrupted when I received this file so please use what you feel is appropriate and to your taste.

Place all ingredients in a screw top jar or blender, shake or blend for a few seconds.

Refrigerate until required.

Makes 1 cup.
